Recipe for Mexican Wedding Cookies
NEED:
1/2 lb. butter
1/3 c sugar
1 tsp. vanilla
2 c flour
1/2 tsp. salt
2 cups almonds or pecans, chopped fine
Powdered sugar
Cream butter and sugar until completely mixed. Add vanilla and salt.
Add flour and mix well. Add nuts and mix well. You may want to use your hands when adding the nuts because the mixture will be quite dry.
Shape into 1 inch balls. Place 2 inches apart on ungreased baking sheet.
Bake at 350 degrees (180 degrees C) for approximately 25 minutes or until they are lightly browned on the bottom.
Remove from tray after about 10 minutes. Place on a plate and sift powdered sugar over them, once, and then again a few minutes later.
Alternatively let them cool completely and transfer to a plastic bag. Sift in the powdered sugar and gently move the bag so that the sugar covers all parts of your cookies.
Eat then or let them set a day to be even more flavorful.
